Not a plumber by any means, here is the problem.

When I go to pull on the handle (one handle) to turn on water the handle and spout pull away from the wall, not the wall plate though. My wife stated that three years ago my father in law put a piece of wood between the wall and the pipe to keep it from doing that.

My question is how do I fix that with out using wood?

You will need to cut the sheetrock to get in there and replace the fastener that came off the wood. If you do not want to use wood, use a copper strap.
My opinion is, don't cut a hole in the wall, just spray some expanding foam in there to surround the pipe...it will lock it in there like it was glued.
