Go to your local plumbing supply show room and talk to the pretty girls.....
Tell them you want to talk about pex and plastic plumbing.
Stay out of the big box stores on this one.

I am not that old but on this I guess I am old school. Plus I like breaking the ole turbo torch out. I have never had a problem with copper. I love the smell of flux in the morning.
I haven't personally used it, but from what I've seen it would be the way to go.
Simply run 1 continuous length of tube from point A to point B. It flexes and bends around corners, etc. The only fittings are at the ends of the runs. Usually where you can gain access. Where you actually hook up to faucets, toilets, etc, you need to convert to a copper stub, but there are premade fittings for that.
