Your problem is called 'water hammer' and is caused by the flow of water in the pipe being cut off suddenly; the water wants to keep traveling and the valve says no. Thus, the water makes the pipe jump, pound, bang, rattle or whatever.
A water hammer arrestor in the cure for the problem. You can buy an manufactrued one or make one yourself. Either one requires a tee, an ell and some short pieces of pipe. Put the tee in the line that is doing the banging, extend a pipe out 2 - 3 inches mount the ell pointing up, install the mfg. arrestor or use at least 12" of pipe to go vertical and cap it. Either way, you now have an amount of air trapped in the arrestor and while water doesn't compress and wants to keep moving the air can be compressed and acts as a shock absorber for the racket.
Insulation, proper attachment of the pipe and isolation of the pipe will all help with this situation but the water hammer arrestro is the answer.
