I recently purchased an old wooden walk in cooler door which I am going to use to refinish my basement. They tossed in two heavy iron hinges that were not originally on the door, but I plan to use. The jamb side of the hinge has a single hole through it with a large pin on the back.

Were these from a walk in cooler, and how do I mount them? I am guessing they were designed to be adjustable some how.

They don't look like any cooler door hinges I ever saw; but then, I haven't seen everything.
I would stabilize the door in place with proper clearance all around and make sure the jamb is plumb. Drill a hole for the pin to go in, pre-drill and use brass, pan-head wood screws to secure the hinge to the jamb and door.

Ahhhhh...restoration pieces. .
Those are nice hinges. You need to drill a hole in your trim to hold the "pin". I would insert a metal piece of some kind to take up some of the wear and tear the pin will get.
Then screw the rest of the bolts in. The hing will be able to hold plenty.
