I'm going to be building new carriage doors for my garage. I would like to know where I can get "stops" (not sure what they are really called) such that when the doors are open they can not be closed when a gust of wind goes by.

What's there now are old and rusty, but it's sort of like a rail that extends when opening the door, when you reach a certain position it fastens and locks in place. To close the door you need to pull down on the hanging chain to disengage the mechenism to shut the door.

You might want to look at a farm store. In our area there is Rural King, Tractor Supply and some local names. Farmers would use the same type mechanisim for holding a gate open.
