Ive got a house from 1910 it has a cross gable roof, my question is what would be the best way to make more room on the second level, the walls are only 3' tall then the shape of the roof is the rest of the room which makes some small bedrooms
 
Welcome to the site!
There is lots that can be done but alot of work and alot of money. Any dormer or raised shed roof would atleast require a re-structure of the floor to take the extra weight and everything would want to be looked at right down to the foundation. You just don't want to do a bunch of work if there is anything iffy below.
