I had a Nest Cam and a Sonos 1 speaker mounted on a wall and I ran the power cables through drywall about 4-feet to a power outlet. We did it by chipping just enough drywall to make space for the cables to lie inside of, and then we covered and painted it, so there is not much breathing room between the cable and the wall.

I am now a bit worried that this may not be safe. Are there any issues with doing this?

Thanks.

No legal or safe, nothing to do with "breathing room".
Wiring needed to be behind the sheetrock not through it.
What happens if someone tries to hang a picture that does not know about your DIY job?

Agreed, this is very dangerous.

What you should do it use one of the two of these, this one or that one. You have to cut a hole in the sheet rock and place a single gang low voltage box like this one, run the power line behind the sheet rock wall and then pull the power cable out thru this box on box ends. Then to finish it so it looks neat use one of the face plates above.
