What to do with this GFCI outlet?

I would like to put a backsplash, but the GFCI outlet is in the way. so I have to do something about it. What do you recommend? Any suggestion will be greatly appreciated.



FYI, there is another regular non-GFCI outlet on the other side of the vanity. Since that regular one is far away from the edge of the vanity top, I am not worried about it.

The other plug most likely is protected by this gfi, you can test that. You can not just do away with this one and cover it up. You would then have a hidden juntion box. Perhaps if the wires are fed from below you could move the wire to a new juntion box below counter and move the gfi to the other plug.
 
Why not just cut a whole in the backsplash, install a box extender and use longer screws, and keep it where it is?
