How do you keep your taping knife from rusting, can you coat it with anything that won't contaminate the mud?

#1, Buy Stainless steel, not cheap steel blades.
If you do buy the cheap steel blades just make sure there cleaned and dried off before storing.
 
Same here. I clean them,shake out the handles, and pick out any mud jammed up in the handle. I go so far as to clean them every time I reload mud or if I'm really fast and furious ever couple of hours. It's a pain, but I'm also still using some of my grandfathers who was nuts about cleaning them all the time. He lived through the depression so throwing things away was never an option, and I learned from him.
I've never had a problem if I clean and dry them.
