I scraped out the plaster popcorn. I already done 2 coats of all purpose joint compound. I plan to do two more coats.

For my third coat, should I use all purpose joint compound or topping?

I plan to have a total of 4 coats.

My last project, I did 3 coats (last coat was topping). This time, I figure 4 coats would give me a smoother surface :)

Once you have applied your first coat of all-purpose joint compound, it doesn't matter too much what you follow with - either the same or topping. The key is that usually either one is pretty easy to sand.
