In a 53 year old house, can I get by with essentially a single circuit (original wiring), in bedrooms, study, and living room? Have updated inside and outside
panel boxes with new breakers and have run new wire to kitchen.

The house that I am redoing has plaster walls, and am trying to avoid a
complete re-wire if possible.

Please advise.
 
Obviously, if you have access to run more circuits then do so.
You may not necessarily need a "complete re-wire" to add more circuits.
Hopefully, your on a 20amp breaker w/12AWG wire.
You'll have to look at what you plan on plugging in and then take a look at the capacity of the existing circuit.

With energy saving being the current fad you might get along with the existing setup for quite a while. And, people move in 7 years, on average.

If you get new appliances, try to get 'soft start' to reduce the start-up current surge.

How much of your house's energy input is handled by natural gas/propane appliances?

If eventually necessary, and if there is no penalty for doing
an incremental rewire vs. a complete, one-time rewire
then go incremental.
