Foot valve for kitchen sink (?)

M doing a minor remodel to my kitchen. Basically a new sink and faucet and replace the galvanized pipes behind (these are the last galvanized in the house). The new sink will be the same size as the old one and we'll keep the same counter.

I have thought over the years that I could save water if I had a foot control valve for this sink - I could start and stop water while my hands were busy scrubbing pots and pans. These valves exist, they look easy to install but this idea is unusual, I don't think I've ever seen this done in a home.

So is this a good idea or am I nuts? Can anyone think of a downside besides other folks not being able to operate my sink?

Yes, it is a cool idea, but if you include the installation costs along with the cost of the foot pedal, it will take you several years to see any savings. I also wonder how they will hold up after being stepped on for a few years?
