I have a good iron skillet that I use with a smear of oil on the bottom.
The fish is about 1/2" thick, I coat one side with my peppers and other good hot stuff.
Put the seasoned side down in the pan for about two to three minutes, depending on the pan.
Remove, let cool, serve over buttered rice, or with a little etouffee' with some crawfish or shrimp poured over the top...
