I had a shower stall installed with an opening of about 32". I bought what I thought was just a standard shower curtain, and it's 70" wide. Do most people use one of this size and let the extra pile up, or are there various sizes available. This one is plastic, so I could just trim it down. What would be a good width for a 32" opening?
 
Sounds like you bought a tub curtian not a shower curtain, take it back.
 
Assuming you haven't taken it back, it all depends on how much "fullness" you like in the curtain. For standard fullness drapes, for example, it is generally recommended to have 2x as much fabric as the window. So if your "window" were 32" across, you would want 64" of fabric to give you a nice coverage. If you like fuller drape, 2.5x is recommended. Really all preference.

I personally wouldn't go below 60" of curtain if you cut it down because you don't want to deal with making sure you pull it over perfectly every time just to keep water out.
