Hello Everyone, new to the forum. I want to thank everyone for your advise ahead of time.

my project is to build a brick bbq. A concrete slab already exists in my backyard which apparently used to have a shed on top.

The slab is sloped 2 degrees and from onside to the other there is about a 3 inch drop.

Do I have to level it before I lay the brick or can I level it with the base layer of mortar?

I apologize if this is a stupid question but I am new to brick laying.

Welcome.

It sounds like the slab was a garage in Los Angeles, given the slope.

Depending upon the size of the BBQ you could simply level with mortar or, or over pour it with mortar.
 
@ 2° it would take roughly 7ft. to drop 3".
 
Cut the brick so the bottom row is level.
3" does sound like a garage if it is close to 20' across.
