Update; I got the 2 exterior walls insulated, sheathed and painted.
My question is: I used plywood on the far wall and drywall on the back wall.

Being that the back wall is exterior, do I need to mud and tape one layer on the seams?

Being that the far wall was nothing but, studs and OSB before insulating and sheathing with ply, do I need to do anything at all to those seams as it now just ply no studs.

I don't believe the taping and finishing is required, but it would not hurt to do it. It's something you can easily do yourself for a garage area. One bucket of mud, One roll of tape and a drywall spreader will be all that you need.

Weatherization is more than just adding insulation. It's also important to stop air infiltration. Caulk any place where you can get air movement. Taping and mudding will definitely make it look better.

It's a garage. Just wanted to finish the walls for a better look than studs and OSB. Figured I should put insulation in the walls before sheathing for future purposes (kinda the right thing to do regardless). If I get some bang for my buck; fine, otherwise, oh well, I tried. I'm good for now, come spring I'll put the finishing touches on it.

Who knows what future KOK has in store, you may want a nice warm man cave in there someday, he'll thank you then for what you do now...😂

As we start to wrap this thread up, the lesson here is that whenever you can insulation, you should insulate. Insulation is cheap and it does pay for itself in reduced energy bills and the ability to use a building year round.
