I'll be installing tongue and grove planks on a ceiling instead of drywall. It is a sloped ceiling. Which direction is down, the tongue or the groove?
The groove, you want the tongue exposed.
The best way I've found to do this is with a narrow crown pneumatic staple gun.

It's a matter of aesthetics.
If the start board cannot be hidden behind the intersecting vertical surface, you can remove, or chamfer, the back of the grove.
Also if you are going to finish the wood do it before installing it.
Yes if you are going to finish the boards do so before putting them up, if not then any shrinking will show on the un finished part of the lumber. My avatar is the 1500 sq ft log home I built the only dry wall is in closets and the basement stair well, rest of the interior is all tong and grove.Would Brad nails be good?
There will be trim installed to cover the edge where it meets the walls.
You mean apply the finish on the boards before putting them up?
I don't think the ceiling will get some sort of coating for a while, if at all.
