I’m trying to find out information about the type of door in the pictures. I specifically want to know if I can take the glass door out and replace it with a screen.

Absolutely yes. As long as you can build (or have someone build) a screen to the same dimensions and the framed windows you are removing. Should be a fairly simple job.

As Snoonyb points out, you should be able to just rotate those handles counter clockwise and have the framed windows fall right out. Though it could be painted in too... You may have to go all the way around the edge with a utility knife to cut the paint and free it up.
 
Look around the garage and basement or attic, up in the joists in the garage etc. You might find the screen for the door.

People always stuck them someplace and then got in the habit of not putting the screen back in during the summer.

You might just find it.
