When I open one of my doors and then let go, it slowly swings to the closed position.
When fully closed, the top of the vertical edge on the jamb side is about a hair away from the jamb. It's been that way for the last 24 years.

Without removing it, how can I tweak the door so it will stay open?
 
There is another remedy for the "door swing", and that is to peen the hinge pin; Remove the hinge pin and with a center punch and a hammer, dimple the hinge pin.

However, you should properly align the door so that it, in the closed position, fits snugly against the stops, which will require some hinge realignment, of both hinges.
 
I solved this my adding a magnetic door stop which not only stops the door handle from punching through the drywall, it keeps the door in a fully opened position.
 
pull the hinge pin, lay it on a concrete surface, smack it with a hammer to put a slight bow in the pin, reinstall the hinge pin.
do one at a time so you don't have to remove the entire door.
