I want to build this concrete block grill stand and dress it up with faux thin brick to hide the concrete block seams. Can I apply the thin brick directly onto the concrete block or do I have to have some type of backing on the block first before I adhere the tiles? I have attached a photo of what I want to build and a photo of a similar finish. Thank you.

You can mortar them straight up. Make sure you put a footing down for the block and get down below the frost depth for your area. If they move around they will crack and also crack the brick facing.

Are those concrete blocks just stacked, or are they set in mortar?

If you zoom in, you can see they are set in mortar.
