Running a feeder from my service panel to a sub panel in a new shed (50A (6 AGW) - ~100') Planning on using schedule 40 PVC conduit between the house and shed.

2 questions:

1) any code issues running CAT-5-6 (ethernet) cable in the same conduit?
2) Cable requirements - any reason not to use UF-B?
 
I avoid doing that You can run ethernet and power in the same conduit only if you use the shielded cables. Maintain a gap of 2 inches between ethernet and power. If you are using unshielded cables, you have to maintain a gap of 8 inches. If you insist on using one conduit, use ethernet cables with a thin foil jacket that protects against interference. Without this shielding, the network speed and data integrity will suffer.
