Actually the key is in the sanding. Anything that can be sanded smooth will work if it's thick enough to cover grain.
True. I think what happened with my test piece is that I applied wood filler and joint compound thinly, then when I sanded (120 & 180 with random orbit sander), those two sanded more easily than the primer. Because of that, they both sanded through to high spots of grain which sanded differently and therefore were visible through the paint. Because the primer was more resistant to sanding, I didn't penetrate to wood so the grain did not reflect through. All in all, I think the primer will be faster and easier to get right.
