I'm about to remodel a 120 y/o cypress cottage. There's not one drop of paint on the property nor is there any insulation, wall/pipe or otherwise. All the walls and ceilings are wood. I mention this as it relates to asbestos and lead paint.

I'm going through the permit process now and soon will have a remodeling permit and Temp electricity. I've got an friend who's an Electrician that's going to supervise that portion of the work. On the other, I'm on my own.

I can't find a reference to our Parish's (County) building codes. For a DIY'er how do you know you're doing it right? How do permit offices treat these old buildings that were built before codes were written?

Ask the folks at the office your obtaining the permit from.Who would know better? If remodeling you will have to bring the building up to todays codes. What the codes were when the building was built are mute.
