This is where the roof has been leaking for the last couple weeks. Will it dry up to normal once the roof is fixed?

How can I be sure that it hasn't become too soggy or will grow mold?
 
Somebody just told me to spray it with 50/50 bleach and water after the roof is fixed.
 
I think you said the roof was level, should be sloped a little and if that is the case, you would remove the plywood and add tapers to the joist and replace the plywood.
Beach is good for hard surfaces like counter tops,
To kill mold in wood, paint it with green treatment like they use for treated lumber with copper in it, look for end grain treatment in the stores, messy it is just like water.
 
Glad they are replacing the plywood, I wouldn't trust it's integrity. When they have it off, make sure the tops of the joists aren't compromised.
