I am having a room built (16x20), with gabo roof style. The contractor finished about 70% of the framing (half of the cable roof is done). My roof is not taken apart yet.

Plywood has been installed on the walls but not the roof. Floor is concrete slab.

I seen many times where it rains, the framing wasn't covered. Any issue with the joist 16 ft long (2x8) sagging later (those hold drywall ceiling)?

I have a few large tarps (19x23) but its a pain to cover that myself. Raining here in Southern Calif will be about 5 hours long:p

Welcome to the real world, portable heat after you have close up. The length of 2x4 and 2x6 is usually wet so they can be straightened as they are used, there is no way a little rain will get the rest of the lumber as wet.
 
Your gonna be fine...out here we get winters, frozen lumber and lots of thunderstorms...it all ends up dryin out here..out there should be No problem.
