Is there an easy way to do this without making it into a giant project? I don't want to drill holes in the structural beam. It seems that liquid nails wouldn't provide much of a fire rating. There are people online who use a variety of methods, including constructing their own U-channel to encase the steel beam...

One guy snaps the drywall, leaving the backing paper behind to hold the piece under the beam... I'd think that would just burn through the weak point even after it was finished.
 
Unless your attempting to achieve an architectural finish, I'd rent a hand sprayer and spray on monokote fireproofing.
