    Type S Portland Lime Cement(PLC). A typical type S mortar will work but will not give you the same bond strength because of the additives and fillers in a blended bag, there is simply less cementitious material.

    extending the brick would be no problem at all. It should be tied to the old. You can do it mechanically, however at the opening it will be more pleasing to the eye if you key it into the old.

    PS: Keep in mind your mix will dry a shade or two lighter than when it's wet . All you have to do is smear a little on a block and let it dry to make sure your happy with the shade before you continue, adjust it from there if necessary.

    Ask for mortar dye at the builders supply, it comes in all colors and you can add it to any portland mix to achieve the color you want. You may have to call around to find it. If they don't have quite the shade you want, create your own with the appropriate colors. Get it in powder form...
